WHere is an easy interpretation of a drink from our latest menu. This is a batch pre-mixed that is bursting full of essence associated with Christmas time, which makes it ideal for a celebration. Save the extra syrup for breakfast cocktails, puddings, or for another batch of the drink.

Serves 10 servings
Ingredients for the Clementine Cordial (produces 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar
Ingredients for the Drink (makes 850ml, serving 10)
400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (from the recipe above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing
Directions
Making the Citrus Syrup: Place all the components inside a pan, bring to a gentle boil, stirring until the sugar dissolves. After that, take off the burner allowing it to cool entirely. Pour into a clean bottle, cap it and store chilled, where it will keep for around a month.
To make Premix: Pour the specified liquids into a big jug, allow it to infuse for an hour, then strain preferably using cheesecloth, so it's completely strained.
When ready to serve: Add 85ml from the cocktail base to a cocktail shaker packed with ice, gently stirring gently for one minute until cold. Pour into an cold coupe glass or equivalent, garnish with some cranberries and finish by giving it a quick spritz with the mandarin essence above the glass.
